Peanut Butter Cookies with Peanut Caramel
Ingredients
Cookie Dough:
1 Cup Butter
1 Cup Br. Sugar
1 Cup Wh. Sugar
3 Large Eggs
1 Cup Peanut Butter
2 Tsp. Vanilla
3 ½ Cups Flour
1 Tsp. Baking Soda
½ Tsp. Salt
Peanut Caramel Sauce:
2 Cups Heavy Cream
1 Cup Water
2 Cups Wh. Sugar
2 Tbsp. Corn Syrup
¼ Tsp. Coarse Salt
1 ½ Cup Finely Chopped Peanuts
1 pkg. Chocolate Chips, melted (optional)
Instructions
Cream first 6 ingredients until smooth, then add dry ingredients and mix well.
Peanut Caramel Sauce:
Combine water, sugar, syrup, and salt in a saucepan and cook into a caramel.
Remove from heat and whisk in hot cream in a slow, steady stream.
Make walnut-size balls of cookie dough, place on cookie sheet, and press thumb to make a depression in each one.
Bake at 350 F for 10-12 minutes.
Cool, then spoon caramel into each cookie, letting it set for an hour.
Drizzle with chocolate.
