Butter Tarts (Rita's)

Ingredients

  • ¾ Cup Corn Syrup
  • 1 Tsp. Vanilla
  • ¾ Cup Brown Sugar
  • 2 Eggs (beaten)
  • ¼ Cup Butter
  • 1 Tbsp. Lemon Juice
  • 1 Cup Currants
  • Nut Optional

Instructions

Cream butter and sugar together mix well. Add syrup, eggs, lemon juice, and vanilla. Add 1 cup currants, carrots or raisins. Mix together, put into uncooked tart shells and bake at 375F for 10-12 minutes.
