Carrot Cake
Ingredients
- 1 cup cooking oil
- 1 ½ cups white sugar
- 4 eggs
- 3 cups carrots grated
- ¾ cup walnuts chopped (optional)
- 2 cups flour
- 2 tsp. baking soda
- ½ tsp. salt
- 2 tsp. cinnamon
Cream Cheese Icing
- 8 oz cream cheese (soften)
- ¼ cup butter/marg (soften)
- 4 cups icing sugar
- 2 tsp vanilla
Instructions
Preheat oven 350 degrees. Beat cooking oil and sugar together in bowl. Beat in 1 egg at a time. Stir in carrots. Add remaining ingredients. Fold in to moisten. Spread in greased 9x13 pan. Bake for 45 min, or until toothpick comes out clean.
Mix all ingredients in bowl and beat slowly first then at medium speed to make light and fluffy. Add more icing sugar if needed. Makes 3 ½ cups.
