Roasted Spicy Salmon

  • 3-4 lbs. whole salmon
  • 1 bunch cilantro chopped
  • ¼ cup parsley
  • 2 tbsp. chopped mint leaves
  • 2 jalapeno peppers (seeds removed )
  • 1 tbsp. minced fresh ginger
  • 2 garlic cloves chopped
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. oil
  • 2 tsp. cumin seeds toasted
  • 1 tsp. salt
  • ½ cup diced tomato’s

Instructions

Preheat oven to 425°. Cut diagonal slashes about 4” long 1 ½ “apart and ½ deep on each side of salmon. In food processor put all ingredients in and pulse to make a paste. Stuff mixture into slits and belly cavity of fish. Cover and refrigerate for 1-4 hours. Transfer salmon to a slightly oiled roasting pan. Cook until fish flakes easily along both sides of backbone. Cook for about 40 minutes.
