Saskatoon Pie

Ingredients
5 cups Saskatoon berries
1 ¼ cups water
1 cup sugar
2 tbsp. cornstarch
2 tbsp. lemon juice
Instructions
Boil sugar, water and lemon juice for 10 min. in a heavy saucepan. Add Saskatoon’s and cook 15 min. over med. heat.
Mix cornstarch with 3 tbsp. of water and add to the berry mixture. Cook 10 min. Pour into one 9” uncooked pie shell. Finish with lattice upper crust. Brush with beaten egg. Bake at 425’ for 15 min., reduce heat to 350’ and bake for 35 min. or until golden brown.
*3 times the recipe fits into a large dutch oven pot.
*1 gallon pail is roughly 15 cups of Saskatoon berries
